I hope this message finds everyone well and thriving in both spirit and health. Personally, while I have always cherished the magic of Christmas and the warmth that the holiday season brings, this past Christmas was definitely one that I would prefer to leave behind as we move into 2025. The experiences and memories of this holiday were not quite what I had envisioned, and I find myself looking forward to a fresh start in the new year.


Looking back on the year 2024, I realize there is an abundance of things to be thankful for. I have had the pleasure of forming new friendships that have enriched my life in unexpected ways, deepening my connections with family, and, most importantly, maintaining our health through various challenges. As we stand on the brink of 2025, I am filled with anticipation for what lies ahead, not only in my personal life but also in my professional endeavors. The prospect of new opportunities and growth excites me immensely.


In the realm of our professional activities, we are currently in the process of scheduling meetings to brainstorm and strategize, working diligently to formulate the best game plan to continue expanding our market presence. It is essential to acknowledge that none of the growth we have achieved could have been possible without the unwavering support and dedication of our vendors and the loyalty of our customers. I extend my heartfelt gratitude to each and every one of you for your contributions and commitment to our shared success.


At this moment, it is important to note that there is currently minimal activity in the farmer's market scene, and indeed, not much is happening locally either. This lull in activity, while perhaps expected, but not necessarily wanted, for this time of year, it allows us the opportunity to reflect, regroup, and prepare for the bustling seasons that lie ahead.


To fill the gap during this quieter time, I thought it would be a delightful idea to occasionally share a recipe that I have come to enjoy. If you appreciate the rich and creamy flavor of goat cheese, I have an excellent recipe that I believe you will find both enjoyable and satisfying to try. Cooking can be a wonderful way to express creativity and share joy with others, and I hope this recipe brings a bit of warmth to your kitchen.

Flatbread with Goat Cheese and Caramelized Onions

Ingredients:

  • 2 teaspoons olive oil

  • 2 teaspoons butter

  • 2 large yellow onions, peeled and thinly sliced

  • 1 teaspoon salt

  • 1 teaspoon sugar

  • 1 large flatbread

  • Olive oil for brushing

  • Kosher salt

  • 4 ounces goat cheese, crumbled

  • Fresh basil, sliced into ribbons


Instructions:

1. Melt the butter and olive oil in a large sauté pan over medium-low heat. Add onions and stir to coat. Cook for 20 minutes, stirring occasionally. Sprinkle the sugar over the onions and continue to cook for another 30 minutes to 1 hour, stirring occasionally, until a deep, rich brown color is achieved. They may start to stick to the pan slightly; it's acceptable if they form a crust, but avoid burning. Set aside to cool when done.

2. Preheat oven to 425 degrees Fahrenheit.

3. Place the flatbread on a baking sheet. Brush the flatbread with olive oil and sprinkle with salt. Top with caramelized onions and crumbled goat cheese. Bake for 6-10 minutes, depending on the thickness of the bread, until the cheese begins to melt and the edges of the bread start to brown

4. Remove from the oven and sprinkle with basil. Cut into pieces and serve.
